Executive Chef Romy Prasad
Growing up in Guyana, Executive Chef Romy Prasad’s early appreciation of fine food was nurtured by his mother’s passion for grinding spices by hand and preparing the family’s meals on a wood-fired stove.
Coming to Canada as a young adult, Chef Romy began his culinary career as a graduate of renowned Stratford Chef School in Ontario. He later attended the Ritz Escoffier Cooking School in Paris, graduating in 1991. Chef Romy then embarked on an extensive working tour of Europe that took him to the stoves of several Michelin-starred restaurants in France, Spain, and Italy, including:
Pierre Gagnaire (St. Etienne, France), Arzak (San Sebastian, Spain), Al Cantuccio (Arona, Italy), Il Naturalista – specializing in vegetarian fine dining (Vicenza, Italy)
After an introduction to a more contemporary style of cooking at Quilted Giraffe in New York City, he returned to Canada with a wealth of influence from his mentors which he shared in the capacity of Sous-chef to Chef Neil Baxter, one of Canada’s most celebrated chefs, and later as Chef Instructor at his alma mater, Stratford Chef School.
In 1996, Prasad was appointed Operations Chef for the opening of Farfalle – the first fine dining restaurant in Casino Niagara. With his stamp on everything including the subtle Mediterranean decor, menus and wine list, Farfalle received the AAA/CAA Four Diamond Award just four months after opening.
In 1997, Prasad joined the well known Umberto Menghi group of restaurants as Executive Chef of Il Caminetto Di Umberto (Whistler, BC). He later moved to Vancouver where he held the position of Executive Chef at CinCin Ristorante for 8 years, winning numerous prestigious awards including two-time Silver Spoon recipient, awarded by the Clefs D’ors Association of Concierges, as well numerous other Vancouver publication awards.
In 2004, Chef Romy joined new restaurant, Savory Coast, as Executive Chef - again claiming numerous awards within the first year of his arrival: "Best New Restaurant” Food Critics’ Choice; "Best Overall Menu & Best Appetizer” – Dineout Vancouver.
In 2009, Prasad moved on in pursuit of other opportunities and as fate had it - connected with Federico Fuoco, owner of Federico’s Supper Club, for which he became Executive Chef until May 2012. During this period, the well decorated chef earned the Supper Club multiple Diner's Choice Awards, including Dine Out Vancouver 2012 Best Bite Awards: Best $38 Menu AND Best Dining Experience, as well as Italy's Quality Seal Certification (Ospitalita Italiana).
In late 2014, after a two year stint as Executive Chef at the upscale Richmond Country Club, Romy Prasad returns to Federico's and comes home. Considered 'Papa' to many staff, his calm yet authoritative persona is embraced by all. Romy's knowledge and talent as a chef, and the staff love of his presence has made for a highly celebrated reunion for the Federico's family, as well as guests. Since his return, Federico's has earned Opentable's TOP 100 Restaurants in Canada (2016), as well as ranking in top 10% restaurants in Vancouver (out of close to 2800 restaurants) on Trip Advisor review site. A team effort, but also highly supported by the pillar of Chef Romy Prasad.
Chef Romy's passion for food extends beyond Federico's kitchen. As Chef Instructor, he also teaches weekly at various lower mainland locations. Look out for cooking demonstrations with Chef Romy at the Supper Club as well!
